COMBINE sugar and water in a large saucepan. Bring to a boil over medium-high heat, stirring to dissolve sugar. Add blueberries, stirring constantly, and return to a boil. Reduce heat and boil gently for 5 minutes.
Ladle blueberries into large jar with tight-fitting lid, using a slotted spoon. Add the rum or spirit of your choice. Ladle hot syrup into hot jars to cover blueberries. Seal and allow to cool before refrigerating. Wait 2 – 3 days before serving. Serve with pork and wild boar.
